Highly valued for its taste and preserving capabilities, there is evidence of salt gathering that dates back to Neolithic times. Plutarch described salt as “the noblest of foods, the finest condiment of all.” One of the first major Roman roads was called via salaria (salt street), and Roman troops abroad received, as part of their remuneration, a salt ration. This eventually developed into a cash payment and became salary.
