The word mushrooms refers only to edible fungi, belonging to a diverse group of organisms and microorganisms that are classified within their own kingdom as they are neither plant nor animal. The variety of fungi throughout the world may exceed that of plants, animals and birds combined.

Unlike plant photosynthesis, mushrooms draw their nutrition from decaying organic matter, or from living plants and animals. Many play a key role in the natural cycle as decomposers, returning nutrients to the soil.

Wild mushrooms have thrived for centuries all over the world in every latitude where it’s humid. The longest living wild mushroom can live close to fifty years.

Though composed of 80 to 90% water (obviously not dried mushrooms), mushrooms contain 2 % to 4% protein and all the essential amino acids, making their protein complete. On average, the protein value of mushrooms is twice that of asparagus and potatoes, four times that of tomatoes and carrots, and six times that of oranges.

Common folklore led mushrooms to be believed to hold many attributes (the ancient scholar Dioscorides was convinced they were capable of spontaneous generation, a common notion throughout medieval times), so much so that they became integrated into important rituals and ceremonies. The Normans of the 11th century prepared a wedding dish of a pound of mushrooms that traditionally was fed only to the groom, to act as a powerful aphrodisiac. In many parts of the world is was believed that eating mushrooms could endow them with super-human strength.
